Happy Saturday everyone!
Like every month, I’m participating in the Fantastic Bake Along hosted by Tracy @itsatsweetday. We actually had a break last month due to poor Tracy having wrist surgery but it’s good to be back! This month, AJ from A petite slice of life chose the recipe and I was pretty excited knowing that she is lactose intolerant and coeliac (which meant no dairy and no gluten). Aj chose a recipe for a caramel recipe, which you can find here on Tracy’s blog.
Now, I’ve made caramel before but never without milk or butter so that was certainly a first! And I’m afraid I failed somewhat 🙈
Everything was going well, I had my ingredients together in the pan, leaving them to boil. That’s when I noticed that the mixture was not taking a caramel colour at all. I was a bit worried but decided to leave it for a bit longer. After a while longer though, it still wasn’t changing colour and I was afraid it would split so I decided to pour it into my dish. I’m not sure what I did wrong but it was NOT easy to cut into pieces afterwards. I feel like this wasn’t really a success but it was still edible and I now have some caramel in the fridge so I can’t complain too much! Looking forward to see what other participants thought though.

I have an amazing recipe for caramel that uses heavy cream and honey if you’d like to try a different one!

Although I’m lactose intolerant, I don’t worry about butter as the lactose levels are virtually non-existent. You’ve reminded me I meant to go and make a pear caramel cake. Whoops, off to the kitchen!

It’s pretty yummy and a family favourite. I’ll certainly post the recipe, or at least send it to you, but I’m going to decline gracefully the invitation to join the Bake Along, as I’m trying to eat a bit less of that kind of thing right now, and a regular event is going to make that much, much trickier!

That sounds delicious Kate! I normally make apple caramel cake, I’ve never tried with pear but it sounds amazing 🤤

It is tasty! I have trouble hanging onto it though, not because it doesn’t keep well, but because there’s unaccountably less in the cake box every time I look. I wonder if it’s (very large) mice!

Oh no:(. Mine was tough to cut, but was caramel color. I wonder what went wrong?

I don’t know! I blame the stove lol I wasn’t at home so maybe that played on my cooking ability (not knowing the stove and pans very well). It’s still yummy though, i love the coconut taste 😍

My recipe has no dairy as I’m actually allergic to dairy and gluten. I wish it was just lactose intolerance as there are so many yummy lactose free products!

I didn’t realise that it was to that extent. I feel so sad for you as my favourite food is cheese! Although I have tried recently a very good dairy free cheese that one of my friend makes and sells at local markets in Brisbane.

Ya it was horrible giving up cheese, but it is easier when it makes you incredibly sick for a week. There are some good vegan cheeses out there now, thank goodness!

Hi Emma! Mine actually didn’t turn that Caramel color either until I added vanilla, but your picture looks similar to mine….I think it was a dairy free success:)😊 I so enjoy baking with you each month. You are FANTASTIC! ❤️❤️

I did add the vanilla but maybe not enough 🤔 it was pretty delicious I have to say so I would still count it as a success too 😊 thanks again for organising as always ❤️

That’s true! Plus it does actually soften once in mouth 😁 now I just have to be careful not to pull my teeth fillings 😅

OKAY, never made caramel before so i am hoping my success will be okay, i am guessing the colour of it is due to the temperature of your sugar but never made it soooo could be the littlest thing, just watched a bake off episode about it LOL

Yes I agree there was probably a temperature issue. I wasn’t at home so I was using my friend’s kitchen and I don’t really know his stove well. Probably had a huge part in it

Oh yeah not been in your surroundings can put you off lol it didn’t look too bad anyways! I imagine mine will be like bedrock.

As long as it tastes good! If you don’t like the look of it, I would dip it in chocolate, not very pleasant, I know, but you won’t see the light color.😉

Mine turned out similar, although it never hardened :(. I always like the rule, “if it tastes good, it doesn’t matter what it looks like.”

Too true! We had opposite issues then, mine was also a bit too hard but it became chewy once in mouth so that’s all that matters!
